We are looking to go away on 14th Jan for a week in Europe (or N. America if we find a great deal). Our thinking is that we can just book somewhere that has had recent snow and/or is forecast for snow.
However, I'm not sure how long we could realistically leave it before being left with expensive options only.
Any tips/advice gratefully received.

I often book the day before i leave - if you like riding POW its the only way to go - and i often don't find it any more expensive than booking a few weeks / months in advance - unless you get a early booking discount.

Your options are always more limited the later you book but you can always find stuff. Even keep an eye on scuk for people with spare last minute spaces.
Last year i booked on the sunday night and flew the following saturday morning. Total spend for a week was £550

When I first started work I used to just book the time off work then wait until about two weeks before I was due to go and then start looking for the last minute bargains as the tour companies try to fill extra spaces. It's a bit of a poker game really I liked the security of having something booked at least a week before leaving but stayed in chalets with people who'd waited another couple of days and paid even less for the same holiday.
