Hi all,
I've just been let down by the US government due to the H-2B visa cap being reached before my app arrived. Anyhoos, I'm now looking to do a season in Europe as a chalet host. A lot of places are asking me for a meal plan. As a vegi, i'm sure i'll be able to come up with loads of great non-meaty dishes but can anyone give me some ideas about the sort of meat dishes that get cooked? Also, how much do they expect you to know about these dishes at the interview?
Finally, I'm lookin to go somewhere with good allround riding and parks. I was thinkin about Mayrhofen, Morzine or 3 valleys. Any reccomendations?

The typical chalet meal plan consists of one of each: chicken dish, lamb dish, fish dish, pork dish, duck dish, and one random meal. The 6th meal can be anything from chili or fajita to another chicken dish that uses thighs instead of breasts. The other meal that's becoming popular is gourmet burgers.

In terms of resorts you're looking at all the right ones. You may also want to look at Les Arcs as it's incredibly under-rated and Espace Killy. |

| Budgeting is a piece of piss and is already built in to the TOs menu plans. You really only need to worry about it if you're working for an independently owned chalet. |

Hi Cat.
You've been given some great advice above but I just wanted to add a few things!
Firstly theres lots to think about when putting together a menu plan such as colours, textures etc as well as the obvious but make sure you're comfortable cooking all of the dishes you include as you may be asked to cook them at interview! (many companies do this now)
Secondly the more familiar you are with a menu and the dishes on it the more time out on the mountain you'll get from the start of the season! So get plenty of practice in, throw some dinner parties for friends as cooking for numbers takes practice and ask for feedback on the dishes you choose.
In my experience meat is relatively easy to learn to cook, where as meat eaters are more likely to struggle at putting together a tasty veggie dish so don't let that worry you
I teach on a Chalet Cookery Course that takes place in Tignes, France and we still have places left on our courses in October. Students come away from the one week course with loads of practical cookery experience in a real chalet environment as well as our specially prepared cookery book and chalet menu plan. They even get some free time to get out on the glacier and do some pre season boarding!

I've been to 3 valleys and Mayrhofen and would recommend the former just because the ski area is better.
I would just add to the advice above on meals with saying that it can't be that difficult judging by some of the real muppets working in chalets I've stayed at. The food has always been at least edible as they generally stick to tried and tested meals and a bit of practice should sort you out there.
It'll be easier than you think probably. |
